Securing your date

We
lock in event dates with clients based on a signed contract that specifically outlines the parameters of the event.  There is a non refundable deposit of 35% of the anticipated catering cost of the event due with the signed contract.  The menu can be can be adjusted after a contract is signed, but pricing and staffing are based on the minimum guest count specified in the contract, and would be adjusted based on any changes to the menu or guest count minimum.  The locking in of an event date with a client allows us to allocate the appropriate amount of our resources on that date to accommodate that event to avoid overbooking a given date.
Foodservice Labor:  

Billingsgate employees the finest and most experienced foodservice professionals in the seacoast for catered events.  Chefs, hostesses, servers, and TIPS certified professional bartenders are available for all off premise events.  The charge for workers is currently $30.00 per hour with a minimum time charge of 4 hours

Gratuities

Our staff at billingsgate is paid a good hourly wage for their services. If you as the client feel that they have exceeded your expectations would like to show them your appreciation, gratuities are graciously accepted.

Beverage Services:

Billingsgate maintains a commercial liquor liability insurance policy and can provide TIPS trained professional bartenders for alcohol service.  Billingsgate does not purchase and resell alcohol,  but we can serve the host's alcohol and provide all the necessary equipment and set up.  The cost of providing a bar setup includes all soft drinks, mixers, bar equipment, ice and garnishes.  The hourly  charges for the bartenders is in addition to the bar setup cost.


Rental Equipment:

We provide all necessary serviceware for our catering services (chafing dishes, silver platters, serving bowls, coffee urns, grills, heat lamps, etc. 
Tents, lighting, tables, chairs, linens, glassware, flatware, etc. are rental items. Billingsgate has a longstanding working relationship with all of the area party and tent rental companies, and we are happy to provide our clients with a suggested rental list for their event.  We can also act as your agent and assist is making arrangements with the rental company of your choice.


Setup & Breakdown:

We will arrive at the event 1.5 to 2 hours before the scheduled start of the event  set up all the foodservice tables, bars, and prep areas so that we are ready to serve before the first guest arrives.  If you would like us to set up the rental tables, chairs, and perform other duties like pre ceremony refreshments, we are more that happy to accommodate but there would be additional labor charges.  At the end of an event we rinse and re-rack all the rental china, glassware, and flatware and we will pull tablecloths if the guests have departed.  If you would like us to breakdown the tables and chairs, again we are more than happy to, but it would involve additional labor charges.  Billingsgate will take away all event related trash.
Leftovers:

All foods that have been finished and displayed and that are still safe for consumption (foods that haven't been out at room temp too long) will be neatly packaged, labeled and left in the hosts refrigerator.  Because we always bring more food that we expect to go through, all food inventories that have not been put out for display will remain with us.
